Tofu Pad Thai Overview:

Ingredients:
- 44 oz of firm tofu
- 16 tbsp raw peanuts
- 2 medium carrots
- 2 medium zucchini
- 1 cup bean sprouts
- 10 oz pad Thai simmer sauce
- 1 tbsp chili paste
- 1 whole lemon
- 3 tbsp extra virgin olive oil
- 12 cups =of cooked pad Thai noodles
- 3 cups of cooked basmati rice
Instructions:
- Cook the pad Thai noodles and rice according to packet instructions
- Dive the tofu into large cubes. Slice the carrots and zucchinis into thin ribbons
- Place a large pan over a medium heat. Add the extra virgin olive oil, then add the tofu and chili paste, and cook until golden, approximately 5-6 minutes
- Add the carrot, zucchini, and simmer sauce. Cook according to the summer sauce instructions, adding the pad Thai noodles a few minutes before you remove from the heat tossing to combine.
- Divide into 6 servings and pair each with some rice. Top each with some peanuts and bean sprouts.
- Slice the lemon into wedges and add to the side of each serving, then enjoy!
