Balsamic Avocado and Egg Toast Recipe Ingredients:
- 3 whole eggs
- 1 medium avocado
- ½ cup cherry tomatoes
- ½ cup spinach
- 1 tbsp balsamic vinegar
- 1 serving salt and pepper
- 1 serving extra virgin olive oil
- 3 thick slices mixed grain bread
Balsamic Avocado and Egg Toast Instructions:
• Pour cold water in a saucepan, approximately a quarter of an inch deep.
• Place saucepan over low-medium heat & bring to a gentle simmer.
• Crack one egg into a shallow bowl. Use a wooden spoon to stir the water & create a whirlpool, then carefully tip the egg in the water.
• Cook for 3-4 minutes or until the white of the egg is set, then remove the egg with a slotted spoon.
• Repeat process with the second & third eggs.
• Mash avocado in a bowl, then add balsamic vinegar & stir to combine.
• Spray olive oil in a frying pan & place over low-medium heat.
• Add cherry tomatoes to the pan & s sauté for 4-5 minutes.
• Toast bread, then top with balsamic avocado & serve with poached eggs, cherry tomatoes, & spinach.
